1 package (12 oz) Melissa's Soy Taco

1 package (12 oz) Melissa's Soyrizo

2 packages (8.8 oz) Melissa's Six Bean Medley

2 cups whole peeled tomatoes, blended

1/2 red onion (diced)

1/2 red Bell pepper (diced)

1/2 green Bell pepper (diced)

1/2 bunch cilantro
-
1 each Jalapeno (minced) - optional

2 tablespoons Melissa’s Costa Azul Hot Sauce

1 clove garlic (minced)

3 cups chicken broth
-
2 tablespoons olive oil
-
1/2 cup diced green onions for garnish

1 cup shredded cheese of your choice for garnish

Salt and pepper

Substitute chicken broth for vegetable broth and remove cheese garnish
Vegan Option
Directions
In a saucepot heat the olive oil and sauté the onion, bell peppers, garlic and jalapeno until softened.
Add the blended tomato, soy taco, soyrizo, six bean medley, cilantro and chicken broth broth. Bring to a boil, reduce heat and simmer for 10 mins.
Season with salt and pepper to taste. Garnish with diced green onion and shredded cheese.
