Asian Fusion
Two chicken breasts marinated In teriyaki, grilled
Half of Melissa’s produce yellow onion
Half of Melissa’s produce red onion
Half of Melissa’s produce white onion
One tablespoon minced ginger
Three garlic cloves minced
8oz pad Thai rice noodles, cooked per box directions
3 eggs, soft boiled
Soy sauce, to taste
Lime juice
Cooked edamame
Chopped spring onion for garnish
Sesame oil for cooking
Grill chicken until fully cooked with internal temperature of 165°F.
Prepare rice noodles per box directions.
In a large wok heat oil, stir fry onion until tender.Add garlic and ginger and cook.
Add cooked rice noodles, use tongs to stir and mix in the onions. Add soy sauce to taste. Add lime juice, about 1 tbsp. Add chicken and stir to mix in.
Plate and garnish with edamame, spring onion and soft boiled egg.
