Ingredients

2 (6 oz.) salmon fillets

To taste sea salt & freshly ground pepper

1 teaspoon granulated garlic

1 tablespoon extra virgin olive oil

6 limes, zested
-
1 clove Melissa's peeled garlic, minced
-
¼ cup fresh cilantro, chopped
-
1 Melissa's shallot, minced
-
½ container Melissa's Coconut Clean Snax®, crushed

1 lime, juiced
Directions
Preheat the oven to 350ºF
Season the salmon on both sides with the salt, pepper and granulated garlic.
Heat the olive oil in an oven safe pan over high heat. Add the fish, skin side up, and sear until golden brown. Flip the fish over and place the pan in the oven. Bake for 8-10 minutes or until cooked through.
To make the gremolata, in a bowl, add the lime zest and the rest of the ingredients. Mix well.
To serve, place the fish on 2 plates and top with the gremolata.
