Great with Baby Red Mashed Potatoes and Garlic Potatoes!
1 whole chicken, about 3 - 4 pounds, rinsed and patted dry
4 tablespoons organic garlic, roasted and chopped
1 cup basil, chopped
2 tablespoons olive oil
Pre-heat oven to 400°F.
Blend the garlic and basil well.
Carefully separate the skin of the chicken from meat. Spread the garlic - basil mixture under the skin, coating as much of the meat as possible. Brush the skin with olive oil.
Place the chicken on a rack in a roasting pan for 45 minutes, or until the skin is crisp, and chicken is cooked.
Remove from oven and cool. Cut and serve.
