Ingredients

1 deep dish pie crust, store-bought or homemade

1 tablespoon olive oil

1 Perfect Sweet onion, thinly sliced

1 cup chopped left-over green beans, creamed onions and/or candied sweet potatoes

1 cup fresh spinach, torn

1 cup shredded sharp white cheddar cheese

5 large eggs, lightly beaten

1 1/2 cups heavy whipping cream

1/4 teaspoon salt

1/4 teaspoon fresh ground pepper
Directions
Preheat oven to 350°F. Line prepared pie crust with parchment paper and fill to the brim with pie weights. Par-bake crust for 15-20 minutes, then set aside and cool.
In a large bowl, whisk eggs, cream, fresh herbs and salt and pepper; set aside.
In a medium sauté pan, heat olive oil and cook onions until tender. Add leftover veggies and cook for 3-5 minutes. Add spinach and wilt.
Spoon filling into the pie crust and spread evenly; top with cheese. Pour cream mixture over veggies and cheese. Cover edge of crust loosely with foil and bake for 40-45 minutes, or until the center feels firm.
