This is like a good old Irish dinner wrapped into one bite.
Ingredients

1 pound Melissa's Baby Dutch Yellow® Potatoes, halved

2 tablespoons extra virgin olive oil
-
Kosher salt and freshly ground pepper to taste

1/2 Melissa's Organic Green Cabbage, cut into 2-inch cubes

Thousand Island Dressing, as needed
-
8 slices Swiss cheese, cut into small triangles
-
8 slices cooked corned beef, cut into small triangles
-
1 small jar Sauerkraut
-
Toothpicks as needed
Directions
Preheat oven to 425ºF.
In a bowl, combine the potatoes, olive oil and salt and pepper. Make sure the potatoes are well coated and place them in a single layer on a baking sheet. Roast them in the oven until fork tender, about 10-15 minutes. Remove from the oven and let cool.
To Assemble
Place the cabbage on a platter. Dress them with the Thousand Island and build the bites in the following order.
Place the cheese on the cabbage.
Place 3 beef triangles on the cheese.
Add a little sauerkraut on the beef.
Top with a potato half and secure with a toothpick.
Serve and enjoy.
