1 pack Melissa's Crepes (about 10-12 crepes)
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups fresh strawberries, thinly sliced
1/2 cup fresh strawberries, halved
1/4 cup strawberry jam, warmed
In a large bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until soft peaks form.
Place one Melissa's Crepe on a flat serving plate or cake stand.
Spread a thin layer of whipped cream over the crepe, using a spatula to distribute evenly.
Add a layer of strawberry slices on top of the cream.
Repeat the process, layering crepes, whipped cream, and strawberries until all crepes are used, ending with a plain crepe on top.
Arrange halved strawberries decoratively on the top layer.
Drizzle the warmed strawberry jam over the top for a glossy finish.
Refrigerate the cake for at least 1 hour to set the layers and make slicing easier.
