4 Strawberry Papayas, peeled and seeded (other fresh papayas may be substituted)
8 organic limes, juiced
3/4 cup sugar
1 cup water
Make a simple syrup by combining sugar and water in a saucepan; bring to a boil over low heat and gently shake pan to dissolve sugar. Do not stir.
Remove from heat and allow to cool. Puree papaya and lime juice in blender. Add simple syrup to pureed papaya until desired sweetness is reached. Pour mixture into an ice cream maker and follow manufacturer instructions to freeze.
Special equipment needed: ice cream or yogurt freezer.
