Ingredients

8 large organic peaches, firm, ripe, peeled and pitted

4 tablespoons sugar

2 tablespoons organic orange juice

1 teaspoon orange peel, grated

3/4 cup heavy whipping cream

1/4 cup almonds, sliced & toasted

8 mint sprigs for garnish
Directions
Blend 2 peaches with 2 tablespoons of sugar in a food processor until smooth. Stir the orange juice and peel into the peach purée.
Cut the remaining 4 peaches into ¼- to ½-inch pieces. Stir one-fourth (about 1 cup) of the peach pieces into the peach purée. Cover and refrigerate the purée and remaining peach pieces separately until cold, at least 3 hours.
Using an electric mixer, beat the cream with the remaining 2 tablespoons of sugar in a large bowl until soft peaks form. Fold the peach purée into the whipped cream. Layer the purée and reserved peach pieces decoratively in 8 parfait glasses. Sprinkle with the almonds. Garnish with the mint sprigs and serve.
The parfaits can be assembled and refrigerated up to 8 hours before serving.
Recipe Note
There are lots of possible variations for these easy and delicious parfaits. For instance, the peaches can be substituted with ripe mango, papaya, berries, or any of your favorite summer fruit. Lime juice and zest can be used instead of the orange juice and zest. And if desired, crushed amaretti cookies or biscotti can be sprinkled over the parfaits instead of the almonds or serve each parfait with a simple shortbread cookie.
