Ingredients

1/2 organic apple, diced fine

1 organic lemon rind
-
Lemon juice
-
3 tablespoons sugar

1 package ready-made sugar cookie dough

1 cup Dried Cranberries
-
1/2 cup Thompson Seedless Raisins or Flame Seedless Raisins

1/2 cup Dried Apricots

Water to cover
Fruit Filling
Directions
Soak cranberries, raisins and apricots in water a minimum of eight hours or overnight. Next day bring the fruit to a boil and then simmer for 2 hours adding boiling water if necessary. Drain and allow fruit mixture to cool. Add diced apple, lemon juice, lemon rind and sugar. Use as filling in Hamentaschen. (Use your favorite cookie dough).
To Fill
Roll out dough on lightly floured surface. Cut dough into triangles about 3-4 inches. Place 1-2 teaspoons filling in center of triangle and fold sides up, keeping the triangle shape. You can cover all the filling, or you can leave a small window. (Dip your fingers in warm water to stick dough together.) Place on non-stick cookie sheet. Continue until all dough is used up. Bake according to cookie dough package directions.
