8 ounces (2 sticks) butter, softened
6 tablespoons powdered sugar
1 teaspoon pure vanilla extract
2 cups all-purpose flour
½ cup chopped Melissa’s Red Hatch Pepper Pecans
Powdered sugar, for dusting
Melissa’s Hatch Pepper Powder, mild or hot, to taste
Preheat the oven to 350°F.
In the large bowl of a stand mixer, combine the butter and 6 tablespoons powdered sugar and mix well. Add the vanilla extract and flour and beat until well mixed. Mix the pecans into the dough.
Shape the dough into 12 crescent-shape cookies and arrange on an ungreased baking sheet. Bake until golden brown, about 15 minutes.
Remove the cookies to a wire rack and cool completely. Lightly dust with powdered sugar and sprinkle with pepper powder to taste.
