Ingredients

2-3 medium-sized quince, peeled, cored and chopped

1-inch piece fresh ginger, peeled and sliced

Melissa’s Honeycomb to taste

1 Seedless lemon, sliced

6 cups water
Directions
Combine quince, ginger and water in a saucepan, cover and bring to a boil.
Turn down to a simmer and cook partially covered for about 30 to 40 minutes or until the quince and ginger have infused into the water.
Remove from heat and add a squeeze of lemon, tangerine (or orange) and honey to taste.
