1 cup granulated sugar
1 cup water
1 package organic tofu, use firm tofu (12.3 ounces)
1 1/2 cups organic oranges juice, freshly squeezed
1 1/2 cups frozen pineapple chunks
Simple syrup to taste
3/4 cup pineapple sherbet
Heat the sugar and water in a sauce pan to a boil. Remove from the heat and let cool.
In an electric blender, mix all remaining ingredients until smooth.
Serve in ice cold glasses immediately.
I like to garnish this drink with a pineapple wedge and orange slice on the edge of the glass.
