This Kiwano “Nojito” mocktail (aka a virgin mojito) is a delicious and easy non-alcoholic drink for summer fun, with a lightly sweetened fizz and a nice kick of refreshing Kiwano.
Ingredients

40 ml simple syrup

4 sprigs mint, plus more for serving

Pulp of one Kiwano

40 ml fresh lime juice

Soda water for serving

Directions
Place the mint in the bottom of a cocktail shaker or large metal cup or bowl.
Using a wooden cocktail muddler or wooden spoon, gently mash the mint 3 to 4 times to release the juices.
Add syrup and lime juice, mix well.
Slice off a small portion of kiwano to use as garnish wedge or half. Scrape out the remaining juice and seeds and add to lime juice-syrup mix.
Strain the mix through a strainer into glasses filled with ice and the Kiwano pulp. Top with soda water.
Garnish with mint sprig and wedge of Kiwano. Enjoy!
