12 fresh lychees peeled

4 oz fresh blueberries

4 fresh or canned lychees

1-2 tbsp lychee simple syrup

Blueberry Fizz Mocktail
Directions
Lychee Simple Syrup
Peel 12 fresh lychees. In a sauce pan, add ½ cup water and ½ cup sugar. Bring to a simmer. Add lychees and simmer until a thick syrupy consistency forms.
Add to a jar and let cool for an hour.
Once cooled, sieve syrup into a sauce jar leaving out the lychees; discard or use lychees in another dish.
Make the mocktail
Muddle together blueberries and lychees until it creates a puree. If it’s still too thick, add to a blender with some canned lychee syrup, or water to thin out the puree.
Add 1 – 2 tbsp of the lychee simple syrup to a cocktail glass.
Add muddled blueberries and lychees to the glass; add ice.
Top with sparkling water and a lychee/blueberry garnish. Cheers!
