Fresh and vibrant, these Spicy Cowboy Caviar Filled Veggie Sweets feature colorful mini peppers stuffed with a zesty blend of beans, grilled corn, and veggies, topped with creamy avocado. A healthy, no-cook Mexican-inspired appetizer perfect for parties and snacks.

1 package Melissa's Steamed Six Bean Medley, rinsed

1 ear sweet corn, grilled, kernels removed

½ red onion, diced small

1 green Bell Pepper, stem and seeds removed, diced small

1 Serrano Chile, minced

1 lime, juiced

½ cup fresh cilantro, chopped

Sea salt and freshly ground pepper, to taste

2 ripe avocados, diced small
Directions
Cut the veggie sweets in half lengthwise and set aside.
In a mixing bowl, add the beans and the next 8 ingredients and mix until well combined.
Using a small spoon, fill the veggie sweet halves.
Top each with a little of the avocado and serve.

You will likely have extra salsa so refrigerate it and enjoy later with chips, as a garnish for your entrees, etc...
