A refreshing, different take on watermelon. The honey complements the smokiness grilling provides, and the bleu cheese helps to cut the sweetness of the dish.
10 one-inch by two-inch cubes of watermelon
1/2 cup tupelo honey
2 tablespoons extra virgin olive oil
1/8 teaspoon sea salt
5 leaves Melissa’s Fresh Basil, cut into ribbons
1/2 cup crumbled bleu cheese
Prepare a hot grill.
In a bowl, whisk together the honey, olive oil and salt. Brush on the watermelon cubes and place on the grill. Cook until you get nice grill marks on both sides and remove to cool.
To serve, place the watermelon cubes on a serving platter. Sprinkle them with the basil and top with the bleu cheese crumbles and serve.
