Ingredients

2 (1-inch) slices Melissa’s Orange Flesh Watermelon

1 Roma Tomato, diced

3 Granny Smith Apples, diced small

1/3 cup crumbled feta cheese
-
1/4 cup pumpkin seeds (pepitas)

1/8 teaspoon freshly ground pepper

1/3 cup tupelo honey

As needed cooking spray
Directions
Prepare a hot grill.
Spray the watermelon slices, on both sides, with the cooking spray. Place them on the BBQ and grill for 3 minutes, flip them and repeat.
Remove them from the grill and let cool.
Cut each watermelon slice into quarters and remove the rind.
To build the bruschetta, place the watermelon wedges on a flat surface.
Sprinkle equal amounts of the tomato over each melon wedge.
Sprinkle equal portions of the apples, cheese and pepitas over the melons.
Season with the pepper, drizzle with the honey and serve.
