While you're still not able to eat out-of-hand, Meyer lemons are perfect for flavoring both savory and sweet dishes alike. Squeeze lemon into water and add to teas, or use in salad dressings. The skin should be smooth and brightly colored. Choose firm lemons that are heavy for their size. Refrigerate in a plastic bag for up to 10 days or until the fruit begins to show signs of age.
