Variegato Radicchio (Italian)

A unique-looking variety of radicchio, Variegato has crinkly, pale yellow leaves stained with tiny dark red specks and shaped like a regular head of lettuce.

This variety also requires a slightly different growing method than other radicchios. The plants, which are extremely delicate to handle, are harvested with a taproot and placed in an environment of very high humidity and little light. The result is the varietal’s pale coloration and delightfully gentle bite.

This milder flavor makes the Variegato excellent shaved into a mixed green salad for a peppery accent and splash of contrast color.
