Also known as the Ghost Pepper, Bhut Jolokia peppers are grown in the USA, the Netherlands. and Spain. Originally from rural India, this pepper's size, texture, and heat level differ depending on the region where it is grown. You'll find this capsicum in your local grocery store, distinguished by its glossy, saturated red color and acrid penetrative smell.
The aroma separates the novice from the pepper head looking for their next greatest fiery quest. Although this pepper is known for its heat, clocking in at over 1 million units on the Scoville Scale, it does present layers of flavor that are expressed in different ways when pounded, sliced or fermented. Natives of India describe the taste like fire, like the sun. Stir into stews, chop up into condiments, or sprinkle over meats to experience a taste of northeastern India. Be warned.
