When harvested before ripening, green papaya offers a crunchy texture and refreshing, mild flavor with a touch of grassy earthiness and a subtle bitterness. It’s a popular ingredient in South Asian cuisines, often shredded for Thai Som Tum salad or pickled as an Indian condiment.
To prepare, peel the skin and remove the seeds before using. You can shred, julienne or cube green papaya depending on your recipe.
Whole green papayas can be stored at room temperature for a few days or in the refrigerator crisper drawer for up to a week. Cut papayas should be stored in an airtight container in the refrigerator for up to three days.
