Did you know that there are over 100 varieties of radishes, each with its own unique flavor, shape, and color? One of the most unique varieties is the White Icicle radish, an heirloom variety with an elongated, slender shape, bright white skin, and a good snappy texture.
White Icicle radishes are incredibly versatile and can be eaten raw, cooked, or pickled. When raw, they can be thinly sliced or grated into salads, added to sandwiches and wraps, or served with dips. Cooked Icicle radishes can be roasted, grilled, sautéed, steamed, braised, boiled, or stir-fried. They can also be used to make soups, stews, and curries. Their flavor transforms from crisp and sharp raw to slightly sweet and silky cooked.
To choose radishes at the grocery store, look for radishes that are firm and have a bright color. Avoid radishes that are soft, have brown spots, or are wilted. The greens should be fresh and green, not yellow or wilted.
To store radishes, trim the greens off and wash the radishes well. Then, place the radishes in a plastic bag or container with a lid and store them in the refrigerator. Radishes will keep for up to two weeks in the refrigerator.
