Most often used in Latin dishes, Melissa's tatuma squash is very similar to zucchini and yellow squash. It is light in flavor and tastes wonderful when added with other vegetables. The tatuma squash has thin spotted light green skin, is 6-8 inches in length and is shaped similarly to the zucchini.
Use tatuma squash in casseroles, stews, or fry with other vegetables. Try a wonderful Mexican casserole known as Calabacitas with sliced tatuma squash, tomatoes, chopped onion and cheese. Tatuma squash is sometimes referred to as white Mexican squash.
Choose squash that is plump and firm, heavy for their size and has smooth, glossy and tender skin. Allow 1/4 to 1/3 pound per person. Refrigerate unwashed in a plastic bag for up to one week.
Rinse squash but do not peel. Leave whole, cut into slices or dice. Boil, butter-steam, microwave or stir-fry tatuma squash.
