This beautiful Italian heirloom variety is much milder than traditional radicchio, with only a hint of bitterness. Tardivo radicchio features long, white and crimson tendrils with some light green coloring. The leaves can be separated and mixed with other lettuces for beautiful salads; or, consider grilling, braising, or cutting in half lengthwise for a wedge salad.
Melissa’s Tardivo is grown in Northern California by Italian-American farmers who have pioneered growing Italian specialties in the United States—this variety is their new favorite!
When selecting Tardivo, choose crisp heads with bright leaves. Avoid any signs of browning, blemishes or holes. The base core should be firm.
Store in a plastic bag in the refrigerator for up to one week.
Rinse with cold water, pat dry. Trim leaves if adding to a salad or cut off core and remove any wilted leaves for cooking.
