The small Serrano pepper ranges from light to dark green and eventually vibrant red when ripe. Known as one of the hottest varieties of peppers, with a Scoville rating of 10,000 to 25,000, people love to use this pepper in guacamole, pico de gallo, salsa verde and more. When you take a bite out of Serrano peppers, you get an intense rush of hot and spicy flavors, with high acidity. If you're looking for a pepper to use in place of a Serrano, a jalapeno visually appears to be the most similar; however, it is a lot less spicy.
Serrano peppers are perfect to barbecue on a skewer with onions and marinated meat. For a refreshing appetizer, you can pickle these peppers with carrots and onions to make a delicious escabeche. Add to huevos rancheros to start your day off right, or create a sweet and spicy peachy-Serrano marinade for chicken wings on game day.
When buying fresh peppers, choose firm, heavy, smooth-skinned ones that are dry (free of moisture). To store Serrano peppers, wrap in a paper towel and store in the crisper section of the refrigerator for two to three weeks.
