In Japan, daikon means “great root.” It’s one of the largest radish varieties, ranging in length from 10 to 12 inches with an average diameter of 2 inches. Red Daikon is characterized by pink to red skin and white flesh with a crispy, aqueous texture and sweet yet peppery flavor. The top of the radish tends to have the sweetest flavor, while the end has more pronounced bitter notes.
Daikon is a common vegetable used in Japanese, Chinese, Korean and Vietnamese cuisine. It is often julienned for salads and spring rolls; fermented in kimchi; pickled as a garnish; cooked in soups, stir-fries and braises; or grated as a condiment.
When selecting Melissa’s Red Daikon look for well-formed, similarly shaped radishes. Daikon should be smooth, hard and free of soft spots or sprouts. Refrigerate unwashed in a plastic bag for up to 10 days.
Daikon should be scrubbed with a brush under running water, prior to use.
