Unusual in color, this variety is appropriately named for its graffiti-like markings. Either ivory with purplish markings, or purplish with ivory markings, the taste is the same as any other eggplant, except that the skin is more tender and the flesh contains fewer seeds. Bake whole or cut in half, steam, grill, microwave, sauté, braise, fry or barbecue. 

Look for eggplant with smooth, shiny skin, heavy for their size and having no blemishes, tan patches, or bruises. Wrinkled, loose skin is an indication of age, and the fruit will be bitter. Keep refrigerated.
