Manzano peppers are relatives of the hot and spicy South American Rocoto pepper. Manzano peppers are typically eaten fresh, because its thick flesh can be difficult to dry.
Do not be alarmed when you cut into this pepper because the seeds are naturally black. At maturity, this chile is yellow-orange in color.
The Manzano pepper rates between 12,000 and 30,000 Scoville units on the Scoville heat index.
Choose peppers that are firm with no soft spots or bruises. Stems should be fresh and pliable. Perishable produce should be refrigerated at all time.
