Kamo Nasu is a Japanese varietal eggplant that is squat and very round. It is about four inches in diameter, with a much creamier and more delicate texture than ordinary eggplant. Its texture is fresh and smooth. The skin color is dark purple and feels velvety. Deep-fried Kamo Nasu is a traditional Japanese delicacy that is not greasy as the vegetable does not absorb much oil because of its high density.
Use in stir fry or excellent when paired with Miso (bean curd) soup. Product of California.
Look for eggplant with smooth, shiny skin, heavy for their size, and having no blemishes, tan patches, or bruises. Wrinkled, loose skin is an indication of age, and the fruit will be bitter. Keep refrigerated.
