White truffles are the rarest and most prized of all truffle varieties by culinary professionals and connoisseurs around the world. They are foraged almost exclusively in one small region in Italy and only by specially trained pigs, who are able to scent them out growing wild underground. Their aroma and delicate, complex flavor is considered the sublime symbol gastronomic luxury. Like all truffles, the White Truffle is best used uncooked or just slightly warmed. This ultimate delicacy is usually shaved over risotto or pasta.
Choose truffles that are firm with no soft spots.
To store, wrap in clean paper towels, place in a sealed container and refrigerate for up to 5-7 days. For the best taste, use within two days.
