Winter truffles are much darker in color than its summer counterpart, the Black Summer truffle, with a much stronger flavor and aroma. Italian Black Winter Truffles are considered superior over all other truffle varieties in the marketplace. They are prized by culinary professionals as the ultimate symbol of gastronomic opulence. Like most truffle varieties, the Italian Black Winter is best enjoyed raw, sliced paper thin into warm pasta or rice dishes. However, the variety is also one of the few that can be gently heated in a sauce or hot dish without losing its flavor. Fresh truffles compliment dishes of pasta, rice, eggs, potatoes, and combine well with butter, cheese and cream.
To store, wrap in clean paper towels, place in a sealed container and refrigerate for up to 5-7 days. For the best taste, use within two days.
