Indian Jujubes are smooth, egg-shaped fruits that are crisp, juicy and sweet, and are best enjoyed out-of-hand—just like an apple! This variety is similar to the Chinese jujube, except that it grows in tropical to subtropical regions, whereas Chinese jujubes prefer temperate climates. This fruit is well-known in India, Taiwan, China, Japan and Singapore but is rare in the United States—until now!
This California-grown fruit is a striking bright green when harvested and will continue ripening and changing color after the harvest. The delicately sweet fruit turns from green to yellow and develops a red/brown blush. As sugars continue developing, tasting notes lean more towards pineapple tropical notes.
Indian Jujubes are usually eaten raw after ripening, but can also be used unripe in chutney or baked goods. They are also good dried and used in place of raisins or dried figs.
Ripen jujubes on the counter away from direct sunlight, then refrigerate in an airtight container after ripe.
