A welcome addition to the fresh variety of Asian items available from Melissa’s, Gai Choy is actually a mustard green that closely resembles many other Asian cabbages. Growing about 12 inches in length, Gai Choy has thin, ribbed green stalks with leaves extending almost from its base. Popular in soups and stir-fries, young, fresh Gai Choy is tender. Its pungent flavor can also be preserved by pickling in brine or sugar. Fresh Gai Choy combines well with garlic, ginger or black bean sauce and is entirely edible. A good source of vitamins and minerals, Gai Choy (like Gai Lan) is an excellent source of vitamin C.
Gai Choy from Melissa’s is hand-selected for excellent quality. Choose heads with full, firm broad leaves and even color. Avoid any limp leaves. Stems should be firm with no holes. Store in the vegetable crisper of the refrigerator for up to 5 days or more.
