These young, fern shoots are gathered when they are still curled and only about 4 to 6 inches high. The bright-green spirals are only available at the first signs of Spring, and only for 2 - 3 weeks each year, making them a sought after delicacy! Their unique flavor, prized by chefs, is a cross between asparagus, green bean and mushroom. Melissa’s Fiddlehead Fern’s are grown on the West coast in Oregon. The name is derived from their resemblance to the cutout shape on violins.
Look for bright-green coils that are tightly closed with only two inches of stem beyond the unfurtled portion. Avoid those with blackened scales. To store, wrap in plastic and refrigerate. Best used within three days. Cook before eating.
