(Pronounced pah-SEE-yah) Pasilla (meaning "little raisin") Peppers are dark raisin brown, long, wrinkled and tapered. Measuring 5 to 7 inches long and about 1-1/2 inches wide.
The Pasilla Pepper, along with the ancho and mulato peppers make up the "holy trinity" of peppers used in the preparation of traditional mole sauce. Also used in powdered form. Melissa’s dried peppers, sold under the Don Enrique label (Melissa’s own line of Latin items), have a more distinctive taste than the same versions sold fresh since the process of drying peppers also brings out their flavor.

Choose whole, unbroken peppers with deep color and a fresh scent. Store in an airtight container in a cool, dry, dark place for up to six months or more.
