The ghost pepper, also known as Bhut Jolokia, is one of the hottest peppers in the world, measuring up to 1 million Scoville heat units. For comparison, a jalapeño pepper averages about 9,000 Scoville heat units. Ghost peppers are native to India and are a popular ingredient in Indian cuisine. They can also be used to make hot sauces, salsas, and other spicy foods. Use them sparingly, as their heat can easily overpower a dish.
When handling ghost peppers, it is important to wear gloves to protect your skin from capsaicin, the compound that gives peppers their heat.
To use, reconstitute dried peppers by soaking them in hot water for 30 minutes.
