Unlike the more pungent, peppery flavor of cassia cinnamon, Ceylon cinnamon offers a refined taste profile and lower levels of coumarin, a compound that can be harmful in large quantities. Its thin, fragile quills break easily and allow for more precise flavoring.
Ceylon cinnamon sticks are ideal for infusing broths, stews, curries and poaching liquids. Or, it can be grated with a fine microplane zester to add flavor to oatmeal or baked desserts. Global applications include Indian biryani and chai tea, Middle Eastern baklava, Latin mole, hot chocolate and rice pudding, and European tea cakes.
