To provide a year-round supply of the popular Black Winter Truffle, even during the summer months in this country, Melissa’s global sourcing allows us to switch hemispheres to import this prized delicacy from Western Australia’s winter harvest.
Having the same robust flavor and aroma as the Italian Black Winter and French Perigord, the Australian Black Truffle was developed from actual spores of the French Perigord truffle. These spores were inoculated into the roots of tree saplings in a nursery; it took another five years before these trees bore any truffles.
Specially trained dogs are used to locate these truffles which are found just below the soil surface. Only the French Perigord variety has flourished in this semi-cultivation experiment of one of the world’s most difficult to reproduce fresh food delicacies.
To store, wrap in clean paper towels, place in a sealed container and refrigerate for up to 5-7 days. For the best taste, use within two days.
