Sometimes called the snake cucumber or uri, the Armenian cucumber is regarded as one of the best slicing cucumber varieties available in the marketplace today.
Actually a melon with a mild cucumber taste, this fruit can grow to 36 inches, but is most flavorful when it is 12-15 inches in length. The Armenian cucumber is thin-skinned and does not need to be peeled or seeded before preparation.
The variety is burpless and easy to digest. Serve raw in salads, sandwiches, drinks, sushi, and hors d'oeuvres; they can also be cooked like zucchini.
To store, wrap in plastic; refrigerate in crisper drawer. Avoid chilling as cucumbers turn mushy when subjected to cold temperatures.
