Spices, Grinding Whole
When grinding whole, fresh spices with an electric spice grinder (also known as a small electric coffee mill) the results in flavor are so much more intensified and livelier.
Whenever possible choose whole spices and grind them just before using.
Add spices to a small non-stick skillet and heat just until the first wisp of smoke appears. Let cool and grind in an electric spice grinder.
You may create your own spice blend by mixing your favorite spices together before heating spices.
To clean your spice grinder, grind 2-3 tablespoons of uncooked rice to a powder, brush out excess with a pastry brush.
