How to Melt Chocolate in a Double Boiler
- Fill a medium saucepan with about 1-2 inches of water. Ensure the water level is low enough that it won't touch the bottom of the top bowl when it’s placed on the saucepan. Heat water to a boil.
- Fill a heatproof bowl (glass or metal) with Melissa’s melting chocolate wafters and place on top of the saucepan. Make sure it sits snugly without touching the simmering water.
- Stir the chocolate gently as it melts to ensure even heating and to prevent burning. Avoid getting any water in the chocolate, as this can cause it to seize.
- Once the chocolate is fully melted and smooth, remove the bowl from the heat. Use immediately for dipping, drizzling, or adding to recipes.
- Safe leftover chocolate in an airtight container for future use.
