How to Melt Chocolate in a Microwave

  1. Warm chocolate in a microwave-safe bowl at 50% power for 15-20 second intervals, stirring after each interval.
  2. Heat until almost melted with a few wafers still visible.
  3. Remove from the microwave and stir until completely smooth.
  4. Use immediately for dipping, drizzling, or adding to recipes.
  5. Safe leftover chocolate in an airtight container for future use.

How to Melt Chocolate in a Double Boiler

  1. Fill a medium saucepan with about 1-2 inches of water. Ensure the water level is low enough that it won't touch the bottom of the top bowl when it’s placed on the saucepan. Heat water to a boil.
  2. Fill a heatproof bowl (glass or metal) with Melissa’s melting chocolate wafters and place on top of the saucepan. Make sure it sits snugly without touching the simmering water.
  3. Stir the chocolate gently as it melts to ensure even heating and to prevent burning. Avoid getting any water in the chocolate, as this can cause it to seize.
  4. Once the chocolate is fully melted and smooth, remove the bowl from the heat. Use immediately for dipping, drizzling, or adding to recipes.
  5. Safe leftover chocolate in an airtight container for future use.
