Refreshing for a hot day, or served in shot glasses for receptions or brunches as a palate cleanser.
Ingredients

1 ripe organic cantaloupe, rind and seeds removed, diced, about 4 cups

1 Organic Red Mini Watermelon, rind and seeds removed, diced, about 4 cups

1 organic lemon juice
-
2 teaspoons honey (Chef's tip to liquefy), (20 seconds in microwave)

1/4 teaspoon salt
-
2 Jalapeno Peppers, seeded and finely minced

1/2 cup organic blueberries
Directions
Puree the cantaloupe and watermelon together. Allow to settle and skim off any foam with a large spoon or skimmer.
Flavor to taste with the lemon juice, honey, and salt.
Add the minced peppers. Chill.
Garnish servings of soup with a few blueberries.
Recipe Note
Chef's tip:
Measuring Honey or Syrups - remove lid and place the container in hot water until liquified. If the honey is in a microwaveable container, heat in 20 second intervals on medium level. Heating the honey or syrup makes the product more viscous and provides more accurate measurement.
