Taro, known as a starchy root vegetable, is consumed by many cultures. This version is very similar to cheesy mashed potatoes!
1 pound Taro Root, peeled and cut into equal-size pieces
1/2 cup milk
2 tablespoons butter or margarine
1 large organic yellow onion, grated
1/2 cup cheese, grated
Salt and pepper to your taste
In a saucepan filled with lightly salted boiling water, cook Taro Root until fork tender. Drain.
In a large bowl, combine Taro Root with next four ingredients and mash until creamy.
Season with salt and pepper and sprinkle with additional cheese, if desired. Serve hot.
