Pul Qua, also known as Opo Squash, is a relative of zucchini. It is milder in flavor and a more dense skin than zucchini. The skin is often peels on mature fruit, left to consume on young fruit. It may be steamed, grilled, roasted, stewed, as one would zucchini. Try stuffing them, too!
Ingredients

1 whole Pul Qua, halved lengthwise

1 teaspoon butter

Canela (cinnamon sticks) ground to your taste

Nutmeg, grated, to your taste

Brown sugar or grated pilocillo, to your taste
Directions
Place pul qua squash, cut side down, in a microwave-safe dish. Pierce skin with fork.
Add 1/2 - 3/4 cups water, depending on size of dish. Microwave on high for 10-12 minutes or until fork-tender.
Place on serving dish and top with butter and seasonings.
Recipe Note
Chef's tip:
- Piloncillo is grated on a box grater or microplane to yield the required volume. For recipes where liquid is used, dissolve piloncillo in that liquid.
