1 pound Shishito Peppers
½ pound feta cheese
Italian seasoning, to your taste
Roast the peppers over the stove-top burner or in the oven.
In a bowl, combine the cheese and Italian seasoning.
Pop the stem off of the peppers and stuff them with the cheese mixture. Serve and enjoy.
