Ingredients

1 pound organic spinach
-
2 tablespoons soy sauce
-
1 teaspoon sugar
-
1 1/2 teaspoons sesame seeds, crushed

1 tablespoon sesame oil
-
1 tablespoon organic green onions, finely chopped

Red chile threads for garnish

Rice vinegar (optional)
Directions
Wash the spinach carefully.
In a pot, bring salted water to a boil and add the spinach, root ends first.
Immerse in the hot water briefly, to keep the bright green color. Rinse immediately with cold water and then squeeze out the moisture. Cut into 3 - 4 inch pieces.
Combine the remaining ingredients and rub into the spinach with your hands.
Garnish with the red chile threads and a small amount of rice vinegar (optional).
