6 Chayote Squash
1 organic yellow onion
2 teaspoons garlic flavored oil
Salt and pepper to taste
Chayote can be used peeled or not. If peeling, peel and cut into 1 inch cubes. Otherwise, cut into 1 inch cubes with peel on.
Sauté onions in garlic oil until they are tender and browned slightly. Add chayote.
Simmer covered for 15-20 minutes. Add salt and white pepper to taste.
Used 1/2 teaspoon salt and 1/4 teaspoon ground pepper for 4 servings.
