Ingredients

1 tablespoon vegetable shortening or canola oil

1 medium onion, diced

1 small sweet red pepper, diced

2 tablespoons cilantro, chopped

1 cup cooked beans

2 tablespoons Fire Roasted Salsa

1½ cups cooked rice
Directions
Preheat a cast iron frying pan over medium-high heat. Melt shortening.
Add diced vegetables and sauté until onion is clear.
Add beans and salsa and stir. Finally, add rice and heat thoroughly, stirring constantly.
Mixture should be moist but not wet.
