Ingredients

1 tablespoon vegetable oil

1 head Limestone Lettuce Leaves

3 cups shelled green peas
-
12 white Pearl Onions, peeled

1/2 cup water

1 bay leaf
-
1 tablespoon mint, chopped

Salt to taste
Directions
In a medium saucepan, heat the vegetable oil over medium heat.
Add the onions and cook until tender, about 5-10 minutes, stirring occasionally.
Add the peas, bay leaf and water. Increase the heat to high and bring to a boil.
Reduce heat and simmer, covered, for about 5 minutes.
When peas are just tender, drain the mixture and discard the bay leaf.
Add the lettuce and mint, toss gently until well combined, and add salt to taste. Serve in small bowls with spoons.
